Sneaking veggies onto your plate...

My friend and I talking about "eating healthy" dieting...
Me: "I'm having a really hard time sticking to healthy eating... I'm hungry all the time"
Friend: "You have to eat vegetables - fill up on them. What's your favourite vegetable?"
Me: "Carrot cake..."
Yep. That's me. LOVE cake, not so much veggies.
However I am holding myself accountable and tracking what I eat so I needed to find a way to sneak veggies into my diet.
Zucchini in place of spaghetti - I know, I know. But here's how I started. You've seen 2oz of pasta right... well in order to not chew my arm off for the rest of the night I decided to bulk up by adding zucchini. I've got one of those spiral thingies that makes them the shape of spaghetti, stir fry for a couple of minutes and then add to the pasta. Mix with sauce and parmesan and there you have it.
Riced cauliflower - unless you like cauliflower (anyone?), then this is going to require some work. First I stir fry to get it crispy THEN I need to add sauce to hide the taste. So usually I'll use this as a bulk up too. With rice, in place of rice or mixed in with quinoa. Haven't tried the cauliflower pizza... that's too upsetting and I don't think I will.
Spinach - the only way I will eat that is blended with my protein shake. And not too much since I don't like the green.
I won't touch lettuce and broccoli will never enter my home. I just don't like green...
I try and roast the rest. Parsnips, carrots, sweet potato, onion. It's a side, not that keen but it's a filler.
I try and come up with ways of bulking up my meals and will post if anything taste doable.
How do you "hide" veggies for a fussy eater?
